Carob is the produce of carob or locust tree also called "Ceratonia Silicuae".
The tree, originary from Mediterranean countries is well known from ancient times (already used by Grecians and Fenicians). Currently grown in southern Spain, north Africa (Algeria, Tunisia, Morocco…) and Italy.

Carob tree, whose name derives from arabic "Kharrub", is a long-living plant of large size. Carob seeds are are a magnificsnt source with a wide variety of industrial uses.

The most important part of seeds is the endosperm, very rich of carrubin, substance which forms highly viscous solutions.
